Ingredients & Producers

We’re inspired by the culinary tradition of seasonality. We spend time sourcing ingredients and enjoy work- ing with our producers to bring the best product to your table.

Our beef and pork comes from Adams Farm in Wilmington, Vermont. Their animals are pasture raised, without the use of antibiotics or hormones. Most of our local produce is grown using sustainable farming practices, without the use of pesticides or herbicides. We use organic tomatoes in our pizza sauce and our wheat flours are organically grown and milled in Vermont.

In addition to what we personally grow and forage for the Eatery, here are some of the farms we’ve been working with directly, as well as folks whose products and ingredients we use:

We’re mindful about our waste and do what we can to minimize it. All kitchen and dining room food scraps are fed to the pigs at Riversong Farm in South Newfane, Vermont. There are no disposable plastic or paper items on your table. All glass, cardboard, metal, plastic, and paper is recycled. These efforts result in our producing minimal waste for each night of service.
